Rosmarius officinalis (Culinary Rosemary) evergreen shrub, can grow 4-5 ft. tall with similar width; very showy purple flowers in mid-spring early summer. Fried Rosemary Potatoes to Die For
New Potatoes (or any kind you like)
Line a sheet pan with aluminum foil. Place washed/dried potatoes on the sheet pan. Bake at 425 degrees until fork tender. Press the potatoes gently, so they squeeze out a little bit. I spread a kitchen towel over them and press gently (because they are hot). The more you press them, the faster they will cook when you deep fry them.
Deep fry the potatoes...cut sprigs of rosemary & deep fry them with the potatoes.
Strip rosemary leaves off and toss with fried potatoes & plenty of kosher salt.
YUM YUM YUM! Serve with sourcream/mayo/dill dipping sauce.
